This selection of I LEGNI is a tribute to a very important component of the production of balsamic: the woods (in Italian, I LEGNI) used to make the barrels where the Balsamic Vinegar of Modena matures. The wood strengthens the grape must acidifaction process, allows the correct maturation through the exchange between vinegar and oxyen, and transmits between its own essences and the product. This balsamic was matured in barrels made only with oak wood, one of the most used woods in barrel construction. The hardness, low porosity and the absence of predominant flavors of the oak, allow the features of the balsamic to slowly stabilize during the maturation process, resulting in a strong and full bodied taste.
